cookies pictured are not what the recipe will look like...these were in our lunchroom. :)
This morning morning show co-host Michelle Sawatzky had our mouths watering, as she shared a couple of delicious recipes for the Christmas season. In case you missed it, here they are:
PEANUT BUTTER CUP COOKIES
First, preheat oven to 375 degrees F.
Sift together 1 3/4 cups flour, 1/2 tsp salt and 1 tsp baking soda; set aside.
Cream together 1/2 cup butter, 1/2 cup sugar, 1/2 cup peanut butter and 1/2 cup packed brown sugar until fluffy.
THEN, beat in one egg, 1 tsp vanilla and 2 tbls milk.
Now, add the flour mixture; mix well. Shape into 40 balls and place each into an ungreased mini muffin pan. Bake at 375 degrees for about 8 minutes. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan. DONE!!

ASIAN DIPPING SAUCE
Stir 1/2 cup water, 3 tbsp lime juice, 2 tbsp finely grated carrots, 4 tsp fish sauce, 1 tbsp granulated sugar, and 1 small garlic clove, minced. You can also add 1 1/2 tsp hot chili-garlic sauce -- but that's optional.
Once the sugar is dissolved... you are good to go.
Serve with spring rolls, egg rolls, coconut shrimp and more.
